The Heritage Hotel Manila names new Executive Chef

Chua Yew Hock of Singapore joins The Heritage Hotel Manila as the new Executive chef.

Chef Chua brings with him 23 years of excellent culinary experience culled from his various postings in different five star hotels such as Mandarin, Hyatt, Concorde, Traders, and Orchard Hotel in Singapore, New Zealand, Australia and Burma.

Prior to his new appointment, he was the Executive chef of Fostre Pte Ltd., a catering company based in Singapore which allowed him to further hone his skills in handling small to grand scale functions. He also helped in the further promotion of local food around Singapore, in cooperation with the Singapore Tourism Board (STB). He also judged culinary competitions during his working stint in Australia.

Chef Chua’s global exposure through the years keeps him constantly updated on the latest food trends around the world, that he specializes in European and fusion cuisine. It is also partly due to years of mentoring by one of France’s most important pioneers of modern French cuisine and recognized as among the world’s most talented chefs, Alain Senderens, who owns the famous Lucas Carton located at the Place de la Madeleine in Paris.

Because of Chef Chua’s wide exposure to diverse ethnic cultures in his home country, diners at the "Mother of All Buffets’’ Restaurant Riviera can also expect to enjoy exquisite local Singapore food masterfully prepared by him. As the restaurant continues to evolve through the years in terms of dish offerings, his team will surely create new dishes which guests will have to watch out for and go on a gastronomic journey with him.
